With the addition of Bob’s Steak & Chop House, the City of Edinburg has raised the bar. It is indeed an excellent steakhouse that attracts patrons from both sides of the border. Steaks, seafood, glazed carrots and fine wine are waiting for you in this elegant and brand-new building and restaurant that is new to the area.
Peter Higgins, the manager-partner, and Juan Luis Mussenden, general manager, are in position to service and entertain what is predicted to be a very busy season. The leadership in Edinburg did good work. Landing this magnificent eatery, owned and managed by distinguished businessmen, it’s like going to sea and fishing a whale. That’s how I see it. So, Edinburg, Congratulations!
Bob’s Steak & Chop House is already the talk of the town. People are already planning to be there. Lucky me, I was put on a list of VIPs to attend a private soft opening. I can’t wait, I have written an article that reads that the steaks melt in your mouth. That the glazed carrot is something that you must taste because it’s out of this world.
Higgins and Mussenden are promising service to patrons beyond anything we have experienced in the Valley. If you are going to be there, please save me a seat, I already have an appetite.
On another matter: The Texas City Managers Association (TCMA) named McAllen City Manager Roel “Roy” Rodriguez, P.E., as City Administrator (City Manager) of the Year. Highlighting his accomplishments since being named city manager in 2014, TCMA recognized that the growth and success of McAllen is attributed to the vision set by Rodriguez for the city and its employees.
The McAllen Chamber of Commerce, United Way, Wells Fargo Bank, and Calvary Baptist Church are joining forces to promote the creation and growth of micro-enterprises in the McAllen area. The Latina Hope Business Network program is designed to facilitate the learning, networking and acting of Spanish-speaking micro-entrepreneurs that want to learn new skills and bring extra income into their homes.

Congressman Cuellar wins: The U.S. Chamber of Commerce honored Congressman Henry Cuellar (D-TX-28) with the Spirit of Enterprise Award, given in recognition of his support for pro-growth policies in the second session of the 114th Congress. The U.S. Chamber of Commerce has bestowed this award to Congressman Cuellar 11 times since he entered the United States Congress in 2005.
Retiring: Dr. Martha May Tevis, professor of education was the longest-tenured faculty member at The University of Texas Rio Grande Valley. She is retiring after a 50-year university career.
She came to teach Latin and education in 1967 at then Pan American College; there were six buildings, 100 faculty members, and about 3,500 students.
