Laguna Beach, CA – Long Live Mexican Cuisine in North America was the World Forum held in Long Beach, CA with the purpose of reinforcing the development of Mexican cuisine abroad through education, commercial expansion, and promotion of the entire value chain which constitutes the national and regional gastronomic heritage.
The event lasted four days where they exhibited not only themes but also gastronomic samples with authentic chefs from the country, organized by the Conservatory of Mexican
Gastronomic Culture and the Institute of Mexicans Abroad.
The chain of restaurants belonging to the Palenque Group in Texas, was present with the participation of its founder Juan Francisco “Pancho” Ochoa (El Pollo Loco, Taco Palenque and Palenque Grill) with the presentation in the panel “Impact and representativeness of Mexican cuisine restaurants abroad.”
Mr. Ochoa, with more than forty years of experience in the restaurant industry with development in both countries, personally has been responsible for maintaining the quality and authenticity of Mexican dishes offered in their restaurants. With life-long experience in the industry, he spoke of topics such as the challenges of the authenticity of the ingredients, the challenges faced by restaurants and cooks abroad, as well as Mexican cuisine as a global trend of consumption. Topics of which Francisco “Pancho” Ochoa is very familiar.
